Job Description

Chef de Cuisine – Fine Dining ModernOmakase Restaurant

 

We are seeking a  Chef de Cuisine with a fine dining background to lead the culinary experience at our exclusive  Modern Omakase concept . An intimate sushi counter offering a  progressive nigiri experience with unexpected riffs on traditional sushi.

This role requires  exceptional leadership, creativity, and a deep appreciation for the art of Omakase . You will be at the forefront of the guest experience, crafting dishes while engaging diners with the stories behind each ingredient. Restaurant location is in Nashville Tennessee.

 

Responsibilities:

  • Lead & Inspire – Oversee culinary production and collaborate with the general manager, setting the standard for excellence.
  • Curate & Innovate – Develop and execute a progressive Omakase menu that balances tradition with modern techniques.
  • Train & Mentor – Foster a collaborative, high-performing team dedicated to continuous improvement.
  • Ensure Perfection – Maintain impeccable food quality, presentation, and sanitation standards.
  • Manage Operations – Oversee inventory, ordering, and staff performance to ensure seamless execution.

Compensation & Benefits:

  • Compensation: $100,000+ per year DOE , plus participation in a tip pool (details to be discussed).
  • Profit-sharing bonuses in addition to guaranteed base salary.
  • Health & Dental coverage  fully paid for the individual, with 50% coverage for family plans .
  • Relocation assistance provided if necessary. Restaurant is located in Nashville Tennessee.

Qualifications:

  • 3+ years of experience in fine dining or sushi concepts ( Omakase experience preferred ).
  • Exceptional  knife skills and a passion for precision.
  • Ability (or willingness to learn) to  break down and portion whole fish .
  • Strong knowledge of  classic techniques and ingredient sourcing .
  • Ability to multitask, describing products/techniques while preparing dishes.
  • Sense of urgency, attention to detail, and an engaging personality .
  • Capable of working long shifts (10-12 hours) and flexible schedules (nights, weekends, holidays).

Pay: $100,000.00 - $115,000.00 per year
